Two Alarm Cheat Chili

Here is an easy “cheat” Chili recipe using Two Alarm Chili seasoning as the base for the seasoning. Here is what you need:
Ingredients
  • Meat of choice
  • 1 medium Onion, chopped
  • 1 Clove Garlic, minced
  • Chili Powder packet from the Two Alarm package
  • Paprika packet from the Two Alarm package
  • 1 Large dried New Mexico Chile
  • 1 Dried Chipotle Chile (ground or cut up into shreds with a scissor)
  • 1 (12 oz) bottle of Dark beer
  • Tomato product as directed on the Two Alarm package
  • remainder of the packaged seasonings (Except the red pepper an Masa packet – discard)
  • 1 tsp Dried Cilantro
  • 1 Tbsp Smoked Paprika
Instructions
  1. Brown the meat and then add 1 medium chopped onion and also 1 clove of minced garlic. Let the onions cook until clear and then add the Chili Powder and Paprika packets from the Two Alarm package along with 1 large dried New Mexico Chile and 1 dried Chipotle Chile (ground or cut up into shreds with a scissor) and allow this to “toast” over medium-high heat with the meat and onions/garlic for a few minutes, being careful not to let it burn. Then “deglaze” the pot with a 12 oz can or bottle of beer. Darker beers work well for this. Then add the tomato product as directed on the Two Alarm package along with the rest of the packaged seasonings, plus a teaspoon of dried cilantro and 1 tablespoon of smoked paprika (I hold back the Red Pepper packet from the Two Alarm package as you will probably have enough heat from the Chipotle). Cook under low heat for 2 hrs or so. I also skip thickening the Chili with the Masa packet as the Two Alarm package calls for. PS I do NOT add beans, but that’s your call.
  2. We usually eat this as “3 way” chili, i.e served over pasta and topped with cheese. At first my wife thought it was a little “different” as she was used to tomato based recipes with very little seasoning and beans. Now she asks me to make this all the time and swears that no other chili is as tasty. All that and easy to boot!
