Instructions
  1. Cut Salmon fillet in half
  2. Combine brine ingredients (Everything but the filet) in plastic bag
  3. Place both halves of salmon in plastic bag
  4. (We get the plastic bag from Costco… the free ones used to bring the fish home in, on a roll above salmon.)
  5. Let sit in brine a little over an hour
  6. Take out of brine. Rest one half of Salmon on main grid and the other on the DD. Pat with paper towels and let air dry 30 minutes.
  7. While salmon is drying…
  8. Prepare GD for indirect cooking. Get temperature to approximately 230F
  9. (We use Gordon Food Service Lump and a couple of pieces of Cherry wood.)
  10. Cook until internal temperature is 135 – 140 (I go closer to the 140, my BGE buddy goes just below 135 both come out great… just depends on how you like the texture.)
  11. *OPTIONAL (discovered by accident, but we do this every time now)
  12. Brush the side up with a very light layer of brown sugar before smoking (after patting dry… cannot stress enough a very light layer though.)
  13. We always serve with my world famous grilled asparagus.
