Ground Cups

I initially followed the recipe to the T and had fantastic results, now I’ll use about any ground meat and vary seasonings and cheeses based on the original platform. I first saw this recipe in a magazine but it is posted here originally. I’ve just modified for the grill dome and some flavor profile changes.
Ingredients
  • 1 lb original Bob Evans sausage roll
  • 1 package won ton wrappers
  • 1 Cup Cheddar cheese
  • 1 Cup Jack cheese
  • ½ Cup Ranch dressing
Instructions
  1. Stabilize grill dome indirect heat setup DD down with heat deflector to 350° F. Crumble sausage into cast iron skillet. Cook over medium heat until lightly browned, stirring occasionally. Drain. Spray mini muffin tins and insert won ton wrappers to form a small cup. Cook 5 minutes in grill dome. Allow wrappers to cool. Mix sausage, cheeses and ranch dressing together. Fill won ton wrappers. Cook for 10 minutes until bubbly.
  2. Some modifications that I’ve made to the recipe are with using ground lamb, lump crab meat, shrimp and crawfish tails, buffalo, beef, duck, gator, venison, etc. This platform really lets you choose the protein and make a nice little appetizer. You can also add in some hot sauce while browning the meat to give a little kick, or just mince some peppers and add to skillet a few minutes before you brown the ground meat. I love pepper jack cheese and generally substitute for the regular jack cheese, but when ever I can get my hands on some habanero cheddar I’ll use it. This is really just a recipe to go crazy and try new stuff. One word of caution, don’t add any smoke wood or clean out firebox of any remaining chunks or chips before starting, it makes the won tons taste funky.
