Honey Orange Poultry Glaze

A glaze I used on a recent duck roast. The sauce can be made ahead or while the duck or chicken is roasting. Apply it during the last half hour of cooking for crispy and tangy skin.
Ingredients
  • 3 large Oranges, Juiced
  • ΒΌ Cup Honey (more or less to taste as Oranges vary in sweetness)
  • 1 tsp Frank’s hot sauce (adjust to heat level you like)
  • 2 Tbsp Butter (to smooth out the glaze)
Instructions
  1. Place all ingredients into a small saucepan
  2. Heat until simmering, stir and continue to heat until the mixture thickens, around five minutes.
  3. Stir while reducing to ensure glaze doesn’t burn or stick.
  4. Allow the glaze to cool until it thickens enough to hold to the bird without running straight off.
