3 Racks Of Pork Spare Ribs
1 1/4 Cups Of General Purpose BBQ Rub
3/4 Of A Cup Of Apple juice

Trim down the rack  to a St. Louis cut. Flip over the rack to the back side, and trim any loose items, and you want to trim down the flap on the back (just before you get to then bone). Find the longest bone, and cut any meat hanging off from that. Pull off the membrane film. Cut the rack in half, and lightly push the general purpose rub on all sides of the rack – going a little heavier with the rub on the front of the rack. Let your meat sit with the dry rub on it for  30 minutes to an hour.

Use the heat deflector on a lower rack, but on the top rack use the rib rack to hold up your ribs. Cook your ribs for three hours at 225°. Put a little apple juice on the ribs and wrap them in aluminum foil. Put them back in the grill, and let them cook for two more hours while wrapped in the aluminum. Once the two hours is over, take them out of the aluminum foil, and put them back on the rib rack for one more hour at 165°. Enjoy!
