Tried my first turkey on the Dome Christmas Day. It turned out great, and perhaps the best turkey I’ve ever cooked. Even the sister inlaw who “hates turkey” said she actually really liked it. She said the reason she dislikes turkey is that “it is usually so dry—but this one is really moist”. Brother in Law saw me carve the breast an asked “what do you do that makes is so moist?” (juices flowing out of the breast as I carved it). I have to admit I was skeptical of all the raving from domers talking about how great their turkey turns out but now I’m convinced it the truth.
Ingredients
  • 1 (15-lb) Grade A fresh Turkey
  • 2-3 handfulls of soaked Apple chips
  • 1 batch OJ Turkey Brine (Link)
Instructions
  1. Cooked a 15 pounder close to 4 hours at 325 grid level with a couple of handfulls of soaked apple chips. I pulled mine with the breast at 175 and thigh at 180. I brined it in a basic brine of 1 cup sugar, 1cup kosher salt, 16 oz OJ to a gallon of water for about 9 hours.
