Cranberry Apple Stuffing

Ingredients
  • 2 Tbsp Unsalted Butter
  • ½ Cup chopped Celery (about two stalks)
  • ¼ Cup chopped Onion (one small onion)
  • ¼ tsp dried Thyme
  • ¼ tsp dried Rosemary
  • ¼ tsp dried Parsley
  • 1 tart Apple (Granny Smith), cored and finely chopped
  • ½ Cup whole Cranberries, chopped (or ⅓ Cup Craisins)
  • 3 Cups packaged Stuffing Mix
  • ¼ Cup Tennessee Gourmet® Apple & Spice sauce
  • (My preference is Sneaky Hot, but use whichever flavor you enjoy)
Instructions
  1. In a skillet melt butter over medium heat. Add celery and onion; sauté for five minutes. Add chopped cranberries and chopped apples; cook until apples are tender, about eight minutes. Season with thyme, rosemary, and parsley. Remove from heat.
  2. Prepare stuffing according to package directions substituting apple & spice sauce for equal amount of water; stir in fruit mixture. Toss to combine. (This may be prepared one day ahead and held refrigerated.)
  3. Makes about four cups of stuffing.
  4. (Chef’s note: Extra stuffing may be put in a buttered casserole dish and baked at 350° F. for about 30 minutes.)
