Hawks Trukey Brine

Mild Brine from Hawk that really brings the subtle flavor.
Ingredients
  • 1 Cup Salt
  • 2 Gallons Water
  • 1 Cup Sugar
  • 2 Cans Ginger-ale
  • 3 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1/4 Cup Black Pepper
Instructions
  1. For a whole turkey, it is ok to use a little bit more salt, but no more than 1.5 cup of salt to 2 gallons of water. It all depends on if you like your food salty or not. You should have sugar as part of your brine solution to offset the salt. Again, the amount of sugar will depend on your taste if you like your food salty or sweet, adjusting from a base of 1 cup. You can brine the turkey for 12-24 hours, but no longer than 24 hours. Again, it is much safer to under-brine than to over-brine, just as under-salt than over-salt. Also, make sure that your brine has cool down completely before you add it to the meat. Once brining is complete, don’t forget to rinse your meat to remove all the salt outside the meat before you start cooking.
  2. Note: 1 gallon of brine is probably enough to cover your turkey, so you can cut all the portion in half. I just like to be safe and make sure I have enough brine all at once, so I make 2 gallons.
