Dr BBQ’s basic Pork Injection |

Injections are usually similar to marinades, the difference being that marinades only reach into the surface of large cuts of meat while the injection is pumped all the way to the center. The timing for injection depends on the strength of the flavoring, typically anywhere from 3 to 12 hours before cooking. Flavorings likewise depend on the meat – for pork, fruit based mixtures are popular like apple, pineapple or peach. A simple pork injection you can start with could be:
Ingredients
- 1 Cup Apple Juice
- 2 Tbsp Apple Cider Vinegar
- 2 Tbsp sweetener of choice
- 2 Tbsp BBQ rub
Instructions
- (You may need to add some salt and/or a little water for consistency, depending on your rub and sweetener choice.) Heat to combine, then cool well in fridge before injecting. This is a mild injection that is safe to use overnight. From here you can go in many directions, or do a search for “pork injection”. As usual, I think it’s best to start with a basic recipe to get an understanding of how injection works and the tweak it in the direction you like.
- Technique on pork and beef is not critical.
