Instructions
- Cut Salmon fillet in half
- Combine brine ingredients (Everything but the filet) in plastic bag
- Place both halves of salmon in plastic bag
- (We get the plastic bag from Costco… the free ones used to bring the fish home in, on a roll above salmon.)
- Let sit in brine a little over an hour
- Take out of brine. Rest one half of Salmon on main grid and the other on the DD. Pat with paper towels and let air dry 30 minutes.
- While salmon is drying…
- Prepare GD for indirect cooking. Get temperature to approximately 230F
- (We use Gordon Food Service Lump and a couple of pieces of Cherry wood.)
- Cook until internal temperature is 135 – 140 (I go closer to the 140, my BGE buddy goes just below 135 both come out great… just depends on how you like the texture.)
- *OPTIONAL (discovered by accident, but we do this every time now)
- Brush the side up with a very light layer of brown sugar before smoking (after patting dry… cannot stress enough a very light layer though.)
- We always serve with my world famous grilled asparagus.
