Molassaes Rum Sauce |

Ingredients
- 2 Tbsp Cooking Oil
- 1 Large Yellow Onion, pared and diced
- 2 Tbsp Minced Garlic
- 2 Tbsp Minced Ginger
- 1 Cup Dark Rum
- ½ Cup Red Wine Vinegar
- 1 Cup Ketchup
- ½ Cup Dark molasses
- ¼ Cup packed Brown Sugar
- 1 Tbsp ground Allspice
- ⅛ tsp ground Mace
- Kosher Salt (To Taste)
- Freshly Cracked Black Pepper (To Taste)
Instructions
- In a medium saucepan over medium heat, warm the oil until hot. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and the ginger, cook for 1 minute. Add the rum, vinegar, ketchup, molasses, brown sugar, allspice, and mace.
- Bring to a low boil, reduce heat and simmer for 20 minutes. Season to taste with salt and pepper.
