Molassaes Rum Sauce

Ingredients
  • 2 Tbsp Cooking Oil
  • 1 Large Yellow Onion, pared and diced
  • 2 Tbsp Minced Garlic
  • 2 Tbsp Minced Ginger
  • 1 Cup Dark Rum
  • ½ Cup Red Wine Vinegar
  • 1 Cup Ketchup
  • ½ Cup Dark molasses
  • ¼ Cup packed Brown Sugar
  • 1 Tbsp ground Allspice
  • ⅛ tsp ground Mace
  • Kosher Salt (To Taste)
  • Freshly Cracked Black Pepper (To Taste)
Instructions
  1. In a medium saucepan over medium heat, warm the oil until hot. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and the ginger, cook for 1 minute. Add the rum, vinegar, ketchup, molasses, brown sugar, allspice, and mace.
  2. Bring to a low boil, reduce heat and simmer for 20 minutes. Season to taste with salt and pepper.
