This jerk sauce is the perfect condiment for Jerk Pork, Jerk Chicken or just as a dipping sauce. Chef’s note: If you’d prefer not to make your own jerk seasoning and jerk sauce, an excellent source of all-organic Jamaican seasoning is Pluto’s Jamaican Seasoning (plutoinc.com). The company offers a complete line of jerk seasonings and jerk sauces.
Ingredients
- 1 Scotch Bonnet Pepper, halved and seeded
- 4 Scallions, sliced into two-inch lengths
- 3 cloves Garlic, peeled
- 3 Tbsp freshly grated Ginger
- 4 sprigs fresh Thyme, minced
- 1 Tbsp whole Allspice Berries or 2 tsp ground Allspice
- Juice of two limes
- ½ Cup Ketchup
- ½ Cup Pineapple Juice
Instructions
- In a food processor or blender, process the Scotch Bonnet pepper, scallions, garlic, ginger, and thyme leaves until finely ground. Add the allspice, lime juice, ketchup, and pineapple juice. Puree the mixture for 30 to 45 seconds or until well combined.
- (This sauce will keep, covered and refrigerated, for up to one month.)
- Yield: Makes two cups
