Beef back ribs are a fun and tasty option to pork ribs and go really well with the homemade coffee rub below. This is a simple rub recipe that consists primarily of ingredients you most likely already have in your kitchen and goes well with beef ribs, briskets and steaks. Coffee Rub Ingredients:
1/4 cup ground coffee
1/4 cup brown sugar
1/4 cup ground black pepper
2 Tbsp paprika
2 tbsp garlic powder
2 tbsp kosher salt
1 tsp cayenne pepper
1/4 tsp ground cloves
Mix all ingredients together. Lightly coat the ribs on all sides with olive oil then thoroughly rub down all sides of the ribs with the coffee rub. Let the ribs sit with the rub on them for 30 min or so.
Set the Grill Dome up for indirect heat and preheat to 225° – 250°. Cook the ribs for between 2 1/2 – 3 hours until the meat has started to pull back away from the bones. At that point, wrap the ribs in heavy duty foil and add a braising liquid such as beer, beef broth or some kind of beef marinade. Continue to cook in the foil for about 1 more hour. Check them with a toothpick and if the toothpick slides in and out of the meat with ease, they’re ready to pull off and serve.
