If you haven’t grilled up some lamb chops on the Grill Dome kamado you’re seriously missing out! Lamb chops are absolutely bursting with flavor, super tender and contrary to certain people’s opinions, they are NOT gamey tasting at all. Lamb can be a bit pricier than beef, but it’s an excellent alternative and tastes amazing when cooked on the Grill Dome.
Rosemary Mint Marinade Ingredients:
2 Tbsp olive oil
2 tsp fresh grated garlic
1 Tbsp chopped fresh rosemary
2 tsp chopped dried mint leaves
1/8 tsp crushed black pepper
1/8 tsp salt
Whisk all ingredients together then pour over lamp chops, making sure to cover all side of the chops with the marinade. Cover in plastic wrap and set in fridge for at least a couple hours, but it can be as long as over night.
Fire up the Grill Dome and get it stabilized to 500° over direct heat. Depending on thickness, cook the lamb chops for anywhere between 3-5 minutes per side with the goal of hitting an internal temperature of 140°.
Shallot Butter Ingredients:
3 Tbsp unsalted butter
2 chopped shallots
Melt butter in medium – medium hot pan. Toss chopped shallots in and cook until lightly browned. Top lamp chops and serve.
