Chef’s note: If you’d prefer not to make your own jerk seasoning and jerk sauce, an excellent source of all-organic Jamaican seasoning is Pluto’s Jamaican Seasoning (plutoinc.com).The company offers a complete line of jerk seasonings and jerk sauces.
Ingredients
- 4 Tbsp ground Allspice
- 1 Tbsp dried Thyme
- 1 Tbsp Paprika
- 1 tsp crushed Red Pepper Flakes
- 1 tsp granulated Garlic
- 1 tsp Onion Powder
- 1 tsp coarse Kosher Salt
- 1 tsp ground Habañero Powder (or 1 Scotch Bonnet pepper, finely minced)
Instructions
- Mix all ingredients in a small bowl. Seasoning will keep, refrigerated and tightly sealed, for three days if using fresh Scotch Bonnet pepper; if using dried Habañero, seasoning will keep up to three weeks. (Recipe makes about 1/3 cup of jerk seasoning. Use 1 to 1 1/2 tablespoons of seasoning for each pound of meat.)
