Chef’s note: If you’d prefer not to make your own jerk seasoning and jerk sauce, an excellent source of all-organic Jamaican seasoning is Pluto’s Jamaican Seasoning (plutoinc.com).The company offers a complete line of jerk seasonings and jerk sauces.

  • 4 Tbsp ground Allspice
  • 1 Tbsp dried Thyme
  • 1 Tbsp Paprika

  • 1 tsp Onion Powder
  • 1 tsp coarse Kosher Salt
  • 1 tsp ground Habañero Powder (or 1 Scotch Bonnet pepper, finely minced)
