Pork Tenderloin Bacon Explosion |

This is a little twist on the recipe for Bacon Explosion, and some would call it a sacrilege with regards to pork. Rather than wrapping ground pork and beef in bacon, I wrapped a pork tenderloin. The results were spectacular. Ingredients
- 1 Medium Pork Tenderloin (in a 2-pack, use one)
- 2 lbs. thick sliced Bacon
- ¼ Cup finely chopped Onions
- ¼ Cup finely chopped red Bell Peppers
- Dry Rub
- BBQ sauce
Instructions
- Wash and separate the 2 pieces of pork tenderloin. Save the second one for cooking alone (or make another explosion).
- Make a basket weave pattern with the bacon.
- Cut a slit lengthwise deep into the tenderloin and stuff with the veggies. You can use different ones if you like.
- Hold the tenderloin together and lay it slit side down on top of the basket weave bacon.
- Roll the bacon around the tenderloin, taking care to make sure the slit and bacon is held together.
- Lay the tenderloin on the hot grill where the bacon ends are at the bottom.
- Add the unwrapped tenderloin to the grill after the main one has cooked for about an hour.
- Cook until internal temp reaches 175, brushing with BBQ sauce every now and then to your preference.
- Take off the grill, and let rest for at least 10 min.
- Slice and enjoy…good on a hamburger bun!
