Skirt or flank steak (see the difference here) are both excellent options for cooking up some tasty tacos, burritos or fajitas. In this recipe, we’ll be grilling up some skirt steak on the Grill Dome to make some yummy tacos that will be topped with a creamy avocado sauce. Make sure to check out the recipe video below. Enjoy!
Skirt Steak Marinade Ingredients:
1/4 cup worcestershire
1/4 cup soy sauce
1/4 cup fresh lime juice
3/4 cup water
1/2 cup brown sugar
1 tsp cumin
1 tbsp red pepper flakes
1 tsp ancho chili powder
4-5 garlic gloves
1 cup fresh cilantro
Place all ingredients in a food processor and pulse until blended well. Cover the skirt steak with this marinade and let it sit in the fridge for at least a couple hours, but it can even sit as long as over night.
Creamy Avocado Sauce Ingredients:
2 tsp ranch dressing
1/4 cup plain greek yogurt
1 Tbsp fresh lime juice
1 avocado
1/4 cup fresh cilantro
After you have pitted the avocado, cut it in to chunks then add with the other ingredients into a food processor and pulse until the mixture is nice and creamy. If it’s too thick, you can add a little bit of water to thin some. Set in fridge to firm up a bit until it’s time to top the tacos!
Preheat and stablize your Grill Dome to 550° – 600° over direct heat and grill the skirt steaks for no more than a couple minutes per side. Skirt steak is best when lightly charred on the outside and medium rare in the middle.
After the skirt steak has rested for 5-10 minutes, be sure to slice it into thin strips AGAINST the grain. Build out your tacos and top with the creamy avocado sauce serve.
