Let’s waylay some Tacos al Pastor. I have never fixed them in the Dome, and they will turn out great!
Ingredients
- 10 Guajillo chiles, seeded
- 10 Ancho chiles, seeded
- 2 bulbs (yes bulbs, not cloves) of Garlic
- 3 tsp ground Cloves
- Salt (To Taste)
- 1 Onion thinly sliced
- 4-5 Pineapple rings
- pork shoulder steaks, country style ribs, or thin sliced Boston butt
Instructions
- Grind the above dry ingredients in a blender with enough white vinegar to make a thin paste. Cook in a glass or nonreactive pot for 15 min. till thick. Keeps a long while in the refrigerator. The peppers you’re using are not hot; don’t be scared.
- The day before cooking, take some pork – I used thin sliced pork shoulder steaks, country style ribs, or thin sliced Boston butt – and mop some of your marinade on it, and stack it together in a pile in the fridge.
- On cooking day, re-stack the meat together with thin sliced onion and pineapple rings. For this to be a close cousin to Tacos al Pastor, you have to use the pineapple.
- {Authentic TaP are served with onions, cilantro, lime wedges, and either salsa verde or salsa rojo (at least at the taquerias in the Mexican part of Nashville, anyway). They’re trimmed off the outside of a giant stack of meat cooked on a vertical rotisserie, similar to gyro meat.}
- However, since I have no vertical rotisserie, I’ve cooked this stack of meat (in the oven) at 250 degrees till 180 in the center of the stack, then run the temp to 350 or so for a little nice crust; then dice and serve.
- I predict the dome will take these to the next level. They may not be authentic – but when authentic is cooked beside a (ahem) gas flame, who needs it?
