Grilled bacon wrapped shrimp on the Grill Dome are one of those appetizers to make if you’re really trying to show off your cookin’ skills 🙂  This recipe calls for a pimento cheese stuffing and though the prep is a bit involved, your guests will be thanking you over and over again.  Promise 🙂  Full recipe and video below.  Enjoy!

Large shrimp
Bacon (1 slice per shrimp)
3/4 cup chopped jalapeños
3/4 cup chopped green onions
Pimento cheese
BBQ sauce and/or sweet chili sauce
Toothpicks

Set the Grill Dome up for direct and indirect heat using the Half Moon Rack and Half Ceramic Stone. Preheat and stabilize around 350° – 400°. Cook the bacon on the indirect side until it just starts to become a light brown and is cooked a decent amount. It still needs to be flimsy enough though to wrap around your shrimp. Pull and set aside.

After the shrimp are peeled and deveined, butterfly them. Mix the pimento cheese, green onions and jalapeños together in a bowl. Place some of the mixture into the butterflied section of each shrimp and wrap with one slice bacon. Secure it with a toothpick.

Cook over direct heat for 3 – 6 minutes, or until shrimp are pink throughout. Pull the shrimp off the Grill Dome and glaze with either BBQ sauce or a sweet chili sauce. Serve and enjoy!
